O tema do Bread Baking Day #33 é “Breads with Booze”, isto é, pães que contenham algum tipo de bebida na sua confecção. Já escrevi muito sobre o BBD e como gosto de participar. O último dia é dia 01 de setembro e quase fiquei fora. Este mês é a Adriana do Baking Powders que é a host do evento.
Confesso que demorei a me decidir sobre a receita, já que para mim é novidade usar bebida no pão, a não ser a receita de pão com cerveja, que já experimentei.
Usei como base uma receita do Dan Lepard e fiz algumas adaptações.
Pão de vinho e nozes (adaptado do Dan Lepard)
200g farinha de trigo branca
100g farinha de centeio
1 colher (chá) de sal
30g de fermento fresco para pão
125ml de vinho tinto
75ml de água
50g de noz pecan em pedaços grandes
100g de noz pecan picadas
2 colheres (sopa) de azeite
Misture as farinhas, sal e fermento numa tigela. Reserve.
No liquidificador bata o vinho, a água e 50g das nozes com o azeite. Junte essa mistura aos secos na tigela.
Acrescente as nozes picadas e misture até que fique uma massa meio grudente. Cubra e reserve por 10 minutos.
Unte com óleo a superfície de trabalho e suas mãos e trabalhe a massa por 10/15 segundos. Coloque de volta na tigela e cubra novamente por 10 minutos. Repita a sova de 10/15 segundos e deixe a massa descansar na tigela (coberta) por 45 minutos ou até que dobre de volume.
Unte uma forma de pão com manteiga e trigo e modele o pão com a emenda da massa para baixo. Cubra e deixe crescer por mais uma hora.
Polvilhe um pouco de trigo e faça talhos na massa com um estilete ou gilete. Asse em forno pré-aquecido por 40 minutos ou até que esteja dourado e e ao bater no fundo do pão saia um som oco. Deixe esfriar numa grade.
Adorei o resultado. O sabor do vinho é muito leve e achei que vai muito bem com as pecans. Farei outras vezes!

Bread Baking Day #33 theme is “Breads with Booze”. I have already posted about BBD and how I really enjoy to participate in this event. The last day to submit your recipe to BBD #33 is september 1st. Adriana from Baking Powders is hosting it this time.
I have to confess that it took me a while to decide on the recipe, since is news for me to use booze in bread. The only time I did use was on beer bread. But I wanted something new.
I used this Dan Lepard´s recipe as a base but made a few changes.
The result came out so beautiful and tasty! The flavor of the wine is very subtle and it goes really well with the pecans. Nice choice! I´ll be baking it again.
Red wine walnut tin loaf (adapted from Dan Lepard´s)
200g white flour
100g rye
1 tsp fine sea salt
30g fresh bread yeast
125ml red wine plus water to make 200ml
50g whole walnuts, plus 100g coarsely chopped
2 tbsp olive oil
Lightly mix the flours, salt and yeast in a bowl. In a blender, whizz the wine/water mix, the whole walnuts and the oil until smooth, then pour into the flour. Add the chopped walnuts and stir briskly to make a soft, sticky dough. Cover and leave for 10 minutes.
Rub a spoonful of oil on the worksurface and a bit on your hands. Remove the dough and knead on the oiled surface for 10-15 seconds. Return to the bowl, cover again, and leave for another 10 minutes. Finally, repeat the light knead, put the dough back in the bowl and leave for 45 minutes, or until almost doubled in height.
Oil and flour a 1lb loaf tin. Lightly flour the worksurface and roll the dough to roughly 15cm x 20cm. Now roll it tightly from the narrow end into a tight sausage, then plonk this seam-side down into the tin. Press down firmly, cover, and leave for an hour until doubled again. Preheat the oven to 200C/400F/gas mark 6.
Lightly dust the top of the loaf with flour and make criss-cross cuts in it with a knife. Bake for 40 minutes until the loaf pulls away from the tin and is a good brown colour. Remove from the tin and leave to cool on a rack.
Puxa adorei esse pão! Gosto de pães rústicos assim, e com vinho e nozes…preciso provar!
